As the holidays are fast approaching, it’s important to be able to keep up with your nutritional goals but still eat ALL THE SWEETS. Here is a fun and easy recipe for gluten-free gingerbread cookies that are high in protein!
Cookie – Ingredients
• 250g almond meal
• 100g butter
• 1 ¾ cup brown sugar
• 4 tbsp ginger
• 2 tbsp cinnamon
• 2 egg
• 2 tbsp almond milk
• 2 scoops Vanilla Whey protein
Cookie – Directions
1. Cream the almond meal, butter, sugar, milk and egg together
2. Add your spices and Whey protein
3. Knead the dough into a disk, cover in clear wrap and refrigerate for 60 minutes
4. Preheat your oven to 350 F (180 c)
5. Roll out the dough with a rolling pin and cut cookies to desired shapes. Place cookies on a baking tray with parchment paper
6. Bake for 8 to 10 minutes
Frosting – Ingredients
• 2 scoops Casein Protein Powder
• 1 cup Greek Yogurt
• 1 tbsp Milk (or until frosting texture)
• ¼ icing sugar
Frosting – Directions
1. In a bowl, stir together protein powder and yogurt
2. Stir in 1 tbsp of milk at a time until you get a frosting-like texture
